Now, a growing body of research suggests that the majority of foods Americans eat every day may be linked to a huge range of diseases and disorders.<\/p>\n<\/div>\n<div class=\"duet--article--article-body-component\">\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph _1agbrixh lg8ac51 lg8ac50 xkp0cg0\">I\u2019m talking about ultra-processed food.<\/p>\n<div class=\"duet--article--block-placement _80slsf1 _80slsf0 duet--article--article-body-component\">\n<div id=\"what-are-ultra-processed-foods\" class=\"_7ka5u1 _7ka5u0 duet--article--standard-heading xkp0cg0\">\n<h2 class=\"duet--article--dangerously-set-cms-markup\"><strong>What are ultra-processed foods?<\/strong><\/h2>\n<\/div>\n<\/div>\n<div class=\"duet--article--article-body-component\">\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph _1agbrixh lg8ac51 lg8ac50 xkp0cg0\">Though we refer to UPFs as \u201cfoods,\u201d common definitions imply that they are more akin to chemical concoctions that happen to be edible. A number of <a href=\"https:\/\/openknowledge.fao.org\/server\/api\/core\/bitstreams\/5277b379-0acb-4d97-a6a3-602774104629\/content\" target=\"_blank\" rel=\"noopener\">different classification systems<\/a> describe different levels of food processing. Per one system, the <a href=\"https:\/\/openknowledge.fao.org\/server\/api\/core\/bitstreams\/5277b379-0acb-4d97-a6a3-602774104629\/content\" target=\"_blank\" rel=\"noopener\">NOVA classification<\/a>, which Monteiro devised, there are four categories. There\u2019s some sort of pressing, refining, grinding, milling, drying, or other action. <\/span><\/li>\n<li class=\"_739u101\"><span class=\"duet--article--dangerously-set-cms-markup\"><strong>Group 3:<\/strong> Think of this group as any meal you\u2019ve ever made. You probably added salt and olive oil \u2014 Group 2 foods! \u2014 to sweet potatoes (a Group 1 food) before roasting them in the oven. Group 3 is when we combine different groups together and undergo some kind of cooking or preservation (canning, curing, or pickling). Cheeses (real block cheese where only salt is added), tofu, and tempeh also fall into Group 3. <\/span><\/li>\n<li class=\"_739u101\"><span class=\"duet--article--dangerously-set-cms-markup\"><strong>Finally, there are the Group 4 foods:<\/strong> UPFs. These foods begin as unprocessed foods \u2014 like rice, corn, wheat, soy, beef, chicken, pork, fish, and so on \u2014 but are then stripped down into their component parts and added piecemeal into UPFs. <\/span><\/li>\n<\/ul>\n<\/div>\n<div class=\"duet--article--article-body-component\">\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph _1agbrixh lg8ac51 lg8ac50 xkp0cg0\">Let\u2019s walk through an example of how an unprocessed food transforms into a UPF.<\/p>\n<\/div>\n<div class=\"duet--article--article-body-component\">\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph _1agbrixh lg8ac51 lg8ac50 xkp0cg0\">Take, for example, corn. Through a series of industrial processing steps, corn can be broken down into corn protein, corn fiber, corn fat, and cornstarch, explained <a href=\"https:\/\/uk.linkedin.com\/in\/christoffer-van-tulleken-74bb98172\" target=\"_blank\" rel=\"noopener\">Chris van Tulleken<\/a>, an infectious diseases physician and author of the book <em><a href=\"https:\/\/bookshop.org\/p\/books\/ultra-processed-people-the-science-behind-the-food-that-isn-t-food\/18884892\" target=\"_blank\" rel=\"noopener\">Ultra-Processed People<\/a><\/em>. Additional processing can transform these ingredients into others. Cornstarch, for instance, can be heated with hydrochloric acid to make corn syrup. These ingredients are then combined piecemeal with varying amounts of sugar, oil, and flour to make <a href=\"https:\/\/www.verywellhealth.com\/corn-allergy-82895\" target=\"_blank\" rel=\"noopener\">everything<\/a> from <a href=\"https:\/\/www.hostesscakes.com\/products\/twinkies\/classic\/#:~:text=Ingredients%3A%20Sugar%2C%20water%2C%20enriched,cornstarch%2C%20hydrogenated%20tallow%2C%20whey%2C\" target=\"_blank\" rel=\"noopener\">Twinkies<\/a> and spreadable cheese to certain types of peanut butter, hot dogs, and Doritos.<\/p>\n<\/div>\n<div class=\"duet--article--article-body-component\">\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph _1agbrixh lg8ac51 lg8ac50 xkp0cg0\">When ingredients are processed, some of the natural fibers, vitamins, and minerals they contained are <a href=\"https:\/\/nutritionsource.hsph.harvard.edu\/processed-foods\/#:~:text=Depending%20on%20the%20degree%20of,food%20in%20its%20original%20form.\" target=\"_blank\" rel=\"noopener\">lost<\/a>. This means that these piecemeal ingredients also require a whole slew of additives to keep them together or to make them more palatable. Additives are artificial colors and flavors; foaming and anti-foaming agents; bulking ingredients; and emulsifiers. Vitamins and minerals are also sometimes added back during processing.<\/p>\n<\/div>\n<div class=\"duet--article--article-body-component\">\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph _1agbrixh lg8ac51 lg8ac50 xkp0cg0\">These additives are a hallmark of UPF and an easy way to determine if what you are eating is ultra-processed or not. \u201cThe main way of telling is if the food contains an additive, which you don\u2019t normally find in a domestic kitchen,\u201d van Tulleken explained. Unless you work at a Michelin-starred restaurant or have some niche interest in gastronomy, you probably don\u2019t have maltodextrin or tartrazine sitting in your cupboards at home.<\/p>\n<\/div>\n<div class=\"duet--article--block-placement _80slsf1 _80slsf0 duet--article--article-body-component\">\n<div id=\"what-the-science-says-and-doesnt-say\" class=\"_7ka5u1 _7ka5u0 duet--article--standard-heading xkp0cg0\">\n<h2 class=\"duet--article--dangerously-set-cms-markup\"><strong>What the science says \u2014 and doesn\u2019t say<\/strong><\/h2>\n<\/div>\n<\/div>\n<div class=\"duet--article--article-body-component\">\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph _1agbrixh lg8ac51 lg8ac50 xkp0cg0\">The hard thing about nutrition science is that it\u2019s notoriously difficult to untangle all the different things that impact health on top of understanding why people make the food decisions they do. Where you grew up, how much money you make, and genetics can all factor into health and nutrition. Because of this complexity, researchers cannot design experiments where they manipulate each of these factors one by one and see what effect that has on health. Instead, scientists rely on observational studies, collecting demographic data and information about the dietary habits of participants including their UPF consumption.<\/p>\n<\/div>\n<div class=\"duet--article--article-body-component\">\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph _1agbrixh lg8ac51 lg8ac50 xkp0cg0\">But even collecting data on dietary habits is challenging. \u201cIn nutrition, what makes it even harder is that diet is so extremely complex,\u201d explained <a href=\"https:\/\/scholar.google.com\/citations?user=gsLuYa8AAAAJ&amp;hl=en\" target=\"_blank\" rel=\"noopener\">Filippa Juul<\/a>, a nutritional epidemiologist at New York University.<\/p>\n<\/div>\n<\/div>\n<div class=\"duet--article--article-body-component\">\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph _1agbrixh lg8ac51 lg8ac50 xkp0cg0\">We\u2019ve known for a few decades that something about modern, prepackaged foods leads to negative health impacts. In the 1980s, as breakneck globalization ushered in a new world where mass production reached more people than ever before, diets around the world changed, too. In the early 2000s, nutritional epidemiologist Carlos Augusto Monteiro was studying dietary habits of fellow Brazilians. He and his team studied associations between <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/17273628\/\" target=\"_blank\" rel=\"noopener\">breastfeeding and obesity<\/a> and the impact of <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/21107500\/\" target=\"_blank\" rel=\"noopener\">income<\/a> and <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/17273647\/\" target=\"_blank\" rel=\"noopener\">education<\/a> on fruit and vegetable consumption. Importantly, Monteiro was also tracking changes in both the prevalence of chronic diseases and changes in Brazilian diets.<\/p>\n<\/div>\n<div class=\"duet--article--article-body-component\">\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph _1agbrixh lg8ac51 lg8ac50 xkp0cg0\">One study, in which Monteiro and his colleagues studied data on dietary habits from 1987 to 2003, found that the consumption of traditional foods such as rice and beans had declined while the consumption of processed food items such as store-bought cookies and soda had increased, in some cases by more than <a href=\"https:\/\/www.cambridge.org\/core\/journals\/public-health-nutrition\/article\/increasing-consumption-of-ultraprocessed-foods-and-likely-impact-on-human-health-evidence-from-brazil\/C36BB4F83B90629DA15CB0A3CBEBF6FA\" target=\"_blank\" rel=\"noopener\">200 percent<\/a>. Monteiro and his team had captured, in real time, a trend that has taken place in nearly every developed country in the world: a huge increase in the consumption of what Monteiro later termed \u201cultra-processed foods\u201d alongside a <a href=\"https:\/\/journals.plos.org\/plosone\/article?id=10.1371\/journal.pone.0092752\" target=\"_blank\" rel=\"noopener\">parallel rise<\/a> in obesity and chronic diseases.<\/p>\n<\/div>\n<div class=\"duet--article--article-body-component\">\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph _1agbrixh lg8ac51 lg8ac50 xkp0cg0\">Ultra-processed foods, or UPFs for short, are those prepackaged foods that can be forgotten in your pantry seemingly forever and still taste great when you happen upon them. UPFs are your sodas, potato chips, granola bars, protein bars, protein powders, instant noodles, candy, and even most types of store-bought bread. These foods are already innately familiar to anyone who has ever stepped foot into a grocery store, a gas station mini-mart, or a fast food restaurant.<\/p>\n<\/div>\n<div class=\"duet--article--article-body-component\">\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph _1agbrixh lg8ac51 lg8ac50 xkp0cg0\">Today, the average American consumes some <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC5855172\/\" target=\"_blank\" rel=\"noopener\">60 percent<\/a> of their calories from ultra-processed foods; some <a href=\"https:\/\/onlinelibrary.wiley.com\/doi\/abs\/10.1111\/ijpo.12563\" target=\"_blank\" rel=\"noopener\">studies<\/a> found that number to be <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC9384846\/#:~:text=Conclusions:,2%2C3\" target=\"_blank\" rel=\"noopener\">higher<\/a> among children. UPFs tend to be calorie-dense, high in fat and sugar, and easy to overconsume, so it\u2019s not surprising that eating more of these foods has long been linked with increasing prevalence of <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/27733404\/#:~:text=After%20adjustment%20for%20potential%20confounders,the%20lowest%20quartile%20of%20consumption.\" target=\"_blank\" rel=\"noopener\">obesity<\/a>, <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/34904160\/#:~:text=According%20to%20the%20studies%20included,%3A%201.21%2D1.42%2C%20I2%20%3D\" target=\"_blank\" rel=\"noopener\">diabetes<\/a>, and <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/35750049\/#:~:text=Results%3A%20Nine%20observational%20studies%20involving,1.37%3B%20P%20%3D%200.034).\" target=\"_blank\" rel=\"noopener\">high blood pressure<\/a>.<\/p>\n<\/div>\n<div class=\"duet--article--article-body-component\">\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph _1agbrixh lg8ac51 lg8ac50 xkp0cg0\">But emerging research has also linked UPF consumption to other diseases and disorders, including <a href=\"https:\/\/www.health.harvard.edu\/mind-and-mood\/ultraprocessed-foods-may-raise-depression-risks#:~:text=None%20of%20the%20participants%20reported,more%20than%20four%20servings%20daily.\" target=\"_blank\" rel=\"noopener\">depression<\/a>, <a href=\"https:\/\/pubmed.ncbi.nlm.nih.gov\/35807749\/\" target=\"_blank\" rel=\"noopener\">anxiety<\/a>, <a href=\"https:\/\/www.bmj.com\/content\/374\/bmj.n1554\" target=\"_blank\" rel=\"noopener\">inflammatory bowel disease<\/a>, and <a href=\"https:\/\/www.ncbi.nlm.nih.gov\/pmc\/articles\/PMC5704144\/#:~:text=The%20majority%20of%20ultra%2Dprocessed,microbiota%20and%2For%20other%20mechanisms.\" target=\"_blank\" rel=\"noopener\">autoimmune disorders<\/a>. Studying the impacts of nutrition on human health is notoriously tricky given how so many factors \u2014 such as race, income, genetics, and the like \u2014 can play a role. However, according to researchers and epidemiologists, when you look across all the available research together, there is an overwhelming sense that UPFs negatively affect human health.<\/p>\n<\/div>\n<div class=\"duet--article--article-body-component\">\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph _1agbrixh lg8ac51 lg8ac50 xkp0cg0\">To be clear, almost all of the food we eat is processed in one way or another, but there is a sliding <a href=\"https:\/\/openknowledge.fao.org\/server\/api\/core\/bitstreams\/5277b379-0acb-4d97-a6a3-602774104629\/content\" target=\"_blank\" rel=\"noopener\">scale<\/a> of food processing. We cook meat; pasteurize milk and eggs to kill harmful bacteria; can vegetables to store and preserve them. Processing not only makes food safer to eat, it allows us to spend less time and energy feeding ourselves each day.<\/p>\n<div class=\"duet--article--article-body-component\">\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph _1agbrixh lg8ac51 lg8ac50 xkp0cg0\">When you cook, pickle, or cure foods, they largely retain their original identity \u2014 steamed broccoli still looks nearly identical to raw broccoli. Ultra-processed foods, however, are made of ingredients that are extracted from whole foods through a series of industrial processing steps and then recombined with additives to give you this whole new food that\u2019s shelf-stable.<\/p>\n<\/div>\n<div class=\"duet--article--article-body-component\">\n<p class=\"duet--article--dangerously-set-cms-markup duet--article--standard-paragraph _1agbrixh lg8ac51 lg8ac50 xkp0cg0\">It seems that somewhere in all this food processing, food can become harmful. But the jury \u2014 or science, rather \u2014 is still out on exactly how that happens. Despite the still-emerging scientific evidence, it seems that reducing UPF consumption could improve your health. Additional processing can transform these ingredients into others. Cornstarch, for instance, can be heated with hydrochloric acid to make corn syrup.
